Lemon and Vanilla Bean Tart

I read a review of one of my favorite bakeries recently several of the reviewers commented on their lemon tart, one reviewer loved it, one reviewer said it was too sour and another said it wasn’t tart enough. It would seem impossible to make the perfect lemon tart that would impress everyone.
I like my lemon tarts refreshingly sour but not mouth puckering and scented with vanilla seeds. Aesthetically I prefer to make a lemon curd let it set, then pipe it into the shell and top it with few candied lemon peel twists. How do you like lemon tarts?
