Sourdough pancakes

One of the thing I would like to be able to do is make great sourdough bread, so the experimentation has begun, but what do you do with all that spare starter? Sourdough pancakes!!! Tonight dinner was followed by sourdough pancakes and maple syrup. They are great sweet but the sour taste lends its self equally well to savoury toppings such as chili beans, coriander, avocado, spicy salsa and lots of cheese; winter comfort food at its best!  

Ingredients:

5 cups of mature 100% hydration starter (fed in the last 24 hrs)

1 cup plain flour

2 eggs

1 1/2 tbs baking powder

2 tbs brown sugar

2 tbs olive oil or melted butter

Method:

Whisk all the above ingredients together. Pour half cups of the batter with a little smear of butter into a heavy pan or on a BBQ plate. Flip when the underside is brown.
